    Bread and Tomato Appetizer

    Bread and Tomato Appetizer drizzled with olive oil

    Bread and Tomato is just about the easiest and most delicious of all appetizers. If truth be told we have it just about every night while we prepare dinner, and often at lunchtime too. The key to preparing a delicious Bread and Tomato appetizer is simple: high quality ingredients! It sounds obvious, doesn't it? Just make sure you use wonderful, fresh tomatoes and a great bread.

    The bread can be any kind you like as long as it's not the soft, packaged and sliced sandwich variety. We use both white and whole grain breads, and if you have bread on hand that's getting stale and a bit hard then it's ideal because the tomatoes soften the bread right up.

    In the photograph above we sliced the tomatoes and piled them onto the bread, but in the photograph below we rubbed the halved tomatoes into the bread so all the juice and pulp was absorbed. Perfect for stale bread! We then topped the bread with the remaining tomato bits.

    The only other ingredient you need is a generous drizzling of delicious, high quality extra virgin olive. And finally add a sprinkling of salt. Optional is the addition of fresh herbs; I like basil, marjoram, thyme or oregano.

    This is also a great snack for kids and one they can easily make for themselves!

    Ingredients 

    • 8 slices bread preferably hearth bread
    • 5 tomatoes medium
    • 60 milliliters Extra virgin olive oil for drizzling
    • 1 tablespoon Salt
    • 2 tablespoons fresh herbs, minced Use basil, thyme, marjoram or oregano

    Instructions

    • Slice the bread.
    • Slice the tomatoes.
    • Top the bread with tomato slices.
    • Drizzle generously with olive oil.
    • Sprinkle with salt to taste.
    • Sprinkle with the freshly minced herbs.

    Really you can use any tomato, including green tomatoes. They aren't as juicy so use slices.

    You can also toast the bread, but then it becomes Bruschetta. Usually a garlic clove is lightly rubbed on the toasted bread for Bruschetta. Here I sprinkled the Bruschetta with some dried oregano from the Puglia region.

    Every time we grill we make Bruschetta! Some with tomato, some just with garlic and olive oil. And as you see above an attractive serving platter can make all the difference when you serve this appetizer.

    But let's face it, the simplest is just Bread and Tomato that you can make in a minute!

    I often bake my own bread and find that this Whole Grain Farro Nut Bread is wonderful for making Bread and Tomato!

    Fresh tomatoes are also great in pasta dishes like Radiatori Pasta with Ricotta, Zucchini, Tomatoes & Mint.
