If you haven’t figured out what to make for lunch today then go for a great plate of easy lemon spaghetti! I hadn’t made this spaghetti with a creamy lemon sauce for a while and since we have a wonderful lemon tree that yields lemons year round it was perfect. Best to use untreated lemons for the zest in this recipe.
I usually vary the pasta I use depending on my whim, but the dish goes especially well with spaghetti and fettuccine.
It’s just about the easiest spaghetti dish imaginable:
Whisk together zest from two lemons, juice from half a lemon, ½ cup of fresh cream and ⅓ cup of freshly grated Parmesan cheese. Use a microplane zester to zest the lemons:
When 200 grams spaghetti, or the pasta of your choice, is al dente toss it in the creamy lemon sauce and serve (2 to 3 people)!
